このVG10の包丁は我々がお薦めする包丁です。
多くの有名な日本人料理人が、この包丁を使っています。
理由は、錆びない、切れ味が長期間継続する事です。
また、VG10の製造は鍛冶屋は必要ありません。
研ぎ師が鋼材を切断し、電気炉で焼入れをします。
研ぐときは、ダイヤモンド砥石を使用し、仕上げは天然砥石を
使用すると、カミソリのような刃になります。
 
V金10号に付いて
いろいろな刃物にマッチした適応鋼種を選ぶ場合、要求される性能も多様化してきました。
しかし、その基本となる条件は現在にいたっても何ら変わることはありません。
V金10の高級ステンレス刃物鋼は、厳選された純度の高い原料鉄を用い、最高の精鋼技術で
作られ、靱り強く、加工性、鍛造性にすぐれています。しかも有害不純物に起因する腐食性
もなく、また耐摩耗性にすぐれた諸性質は弊社の「V鋼」刃物鋼シリーズの一大特徴となって
います。

V金10は上記の特徴を持つ原材料に種々の合金元素を添加して形成されています。
Cr 15%, Mo 1%, Co1,5%を添加したことで、素地(マトリックス)を強化し、炭化物の脱落防止
効果を一層高めています。Vの添加によって組織を微細化すると共に、これらCr, Mo, Vの元素
は硬い炭化物を多量に作るので、耐摩耗性は一段と向上し、刃物の永切れが持続します。
被削性は良好で刃研ぎが容易です。V金10は高温焼き戻しでの二次効果が現れるので、約450℃ま
での表面コーティング処理を施すような刃物にも最適です。
