blade manufactured by Hitachi Metals (now Proterial).
It boasts high hardness and sharpness comparable to carbon steel
(white steel/blue steel), while being rust-resistant, making it a favorite
among professional chefs and home cooks alike. It's extremely popular as
a material for Japanese kitchen knives.
 
Main Features of Gin-san Steel:
Rust-resistant stainless steel: Being stainless steel, it's easy to maintain
without worrying about rust, even with prolonged use around water or when
handling highly acidic foods (fish, meat, citrus fruits).
 
Sharpness comparable to carbon steel: With a higher carbon content than
conventional stainless steel, it achieves "sharpness" and "edge retention"
